Balsamic Glazed Oyster Mushrooms

Ingredients
1 1/2 pounds Cleaned oyster mushrooms
5 tablespoons Olive oil (divided)
3/4 teaspoon Cumin
3/4 teaspoon Coriander
3/4 teaspoon Garlic powder
3/4 teaspoon Chilli powder
3/4 teaspoon Turmeric
3/4 teaspoon Smoked paprika
1/2 teaspoon Red pepper flakes
1/2 teaspoon Kosher salt
Juice from 1 lemon
3 tablespoons Balsamic glaze

Step by Step Instructions
  1. Preheat oven to 400 degrees. Heat a skillet over medium heat. Tear the mushrooms apart into large flat chunks, then drizzle them with olive oil.
  2. Put the mushrooms into the pan and cook them for 3 to 4 minutes on each side. When they have cooked, put them onto a plate lined with paper towels to cool.
  3. Whisk the olive oil and all of the spices together in a small bowl. Mix the lemon juice & balsamic glaze together in a separate small bowl.
  4. Brush each side of the mushroom pieces with the spice mixture. Put the seasoned mushrooms onto a baking sheet lined with parchment paper.
  5. Layer the mushrooms into a stack and insert 4 wooden skewers to make the pile stand upright. Drizzle generously with some the balsamic mixture and blot up any that spills onto the parchment paper.
  6. Bake for 10 minutes, then add the rest of the balsamic mixture to and bake for 10 more minutes. Remove the pan from the oven and slice into portions.
