Brown Lentil Soup with Spinach and Carrots

Vegan!

Ingredients
1 tablespoon Olive oil
1 Sweet onion (chopped)
1 clove Garlic (crushed)
1 cup Brown lentils
4 cups Boiled water
2 or 3 Carrots (chopped)
16 ounces Chopped spinach
1 teaspoon Cumin powder
Salt to taste
Lemon juice to taste

Step by Step Instructions
  1. Saute the onion and garlic in the olive oil in a pot over medium heat. Add the carrots and saute for 2 minutes.
  2. Add the lentils and boiled water, then cover and let simmer on low for 30 minutes.
  3. Add the spinach, cumin, and salt, then cover the pot again and let simmer for 10 minutes. If desired, add lemon juice before serving.
