Tullahoma Locally Grown:  Your Market Closes Today at Noon

Good morning.

We all woke up this morning to ice and snow. Many businesses are closed today as are the schools and day care centers. One thing that is not closed today is your market. Well, at least not yet. That’s right, the market closes at noon today. You still have a few hours to shop online at the Tullahoma Locally Grown Market.

Valentine’s Day is Approaching.

Valentine’s Day is this Sunday. There is still time to order love-inspired candles, herb plant baskets, Valentine’s Day Cookies and Heart Shaped Mini-Cheesecakes. See the Valentine’s Day category for details. You can also order a pound of freshly roasted coffee beans. Fuel So Good Coffee Roasters created a Lover’s Blend and will customize the label for you. See the picture below for an example. When you order the coffee, please indicate if you want the beans ground. If you do, let them know what kind of machine (i.e. drip, french press, etc.) you brew your coffee with. That will ensure the beans are ground to the precise size. Also, let them know what you want written on the label.

ALFN Local Food Club:  Market Reminder

The market will be open until tomorrow at high noon. There is still loads of produce and locally produced goods available.

In Jo Robinson’s book, Eating on the Wild Side, she notes certain vegetables have high respiration rates. Veggies like broccoli and artichokes are heavy breathers when they are harvested resulting in a rapid drop in moisture and nutrients. In a study done in 2003, after ten days (optimistic time period for veggies to be harvested and shipped to the grocery story), broccoli had “lost more than 80 percent of its glucosinolates, 75 percent of a class of phyonutrients called flavonoids, and 50 percent of its vitamin C.” The nutrition had been released due to respiration. So, is eating local more healthy? If we consider respiration a factor, then yes. The produce you purchase from our local growers cuts the ten day window down to 1-2 days. In some cases, the produce you purchase on Saturday was cut early that same day!

Be fresh, eat fresh!

Remember, you can always schedule your volunteer time in advance. Feel free to sign up here: Volunteer Spot.

Farm to Table Recipes

KALE WITH SAUSAGE & WHITE BEANS

Curly kale is shown for this recipe, but you could use any kale, as well as chard, turnip greens, beet greens, or collards. A splash of vinegar (sherry, red wine, cider) is a nice touch right at the end of cooking. Cajun type seasoning also works well with this when using regular sausage.

1 Tablespoon olive oil
1/2 lb bulk sweet Italian Sausage or other sausage (use gluten free sausage if cooking gluten free)
1 onion sliced thin (about 1 ½ cup sliced onion
2 large garlic cloves sliced thin
1 pound kale (1 large bunch), center thick rib removed, leaves roughly chopped
1/2 cup chicken or vegetable stock
1 15 oz. Can of white beans, rinsed and drained
salt and pepper
1. Heat the olive oil in a large sauté pan or wok over medium-high heat and add the sliced onions. Caramalize onions, pour into dish and set aside. Add bulk sausage. If you can’t find bulk sausage, slice the sausage into bite size chunks. Cook till done and add to bowl with onions. Add the garlic, cook for another minute and add to onions and sausage.

2. Add kale to the pan or wok. Sprinkle salt over everything, then add the stock. Cover the pan, and bring to a boil. Lower the heat to medium, partially cover with a lid and cook for 2 minutes.

3. Uncover, add onion, sausage and garlic to the kale. Mix everything well (the kale will have cooked down by now) and add the beans. Cover the pot again and lower the heat to low. Cook another 5 minutes, then turn off the heat. Let stand 5 minutes, then serve.

Please, share your recipes with us on the website, on the Recipes tab. We’d all love to know how you use your Market at Dothan Locally Grown products, so we can try it too!
