Herbed Goat Shanks

Serves: Serves 2 or 4 depending on the size of the shanks!


Ingredients
4 Goat Shanks
4 cloves peeled and minced garlic
1 tsp dried rosemary
1 tsp dried thyme
1/2 tsp salt
1 tsp white pepper
4 Tbl. Tomato Puree'
1 cup dry red wine, like Merlot

Step by Step Instructions
  1. Preheat the oven to 325F. Place each Goat Shank on an 18" square of heavy oven foil. Put a minced garlic clove over each, then sprinkle the remaining herbs and seasonings over them.
  2. Shape the foil around the shanks, leaving the top open. Pour 1 tablespoon of tomato puree over each shank, then 1/4 cup of wine into the foil packet. Seal the packets tightly.
  3. Put the packets in a baking dish and bake for 2 hours, or until very tender.
